	<abstract_fa>&lt;div align=&quot;justify&quot; style=&quot;direction: rtl&quot;&gt;&lt;b&gt;زﻣﯿﻨﻪ و اﻫﺪاف:&lt;/b&gt; ﺷﯿﺮ و ﻓﺮاورده ﻫﺎی آن ﺑﻪ ویﮋه ﭘﻨﯿﺮ ﮐﻪ ﻗﺴﻤﺖ وﺳﯿﻌﯽ از اﺣﺘﯿﺎﺟﺎت ﻏﺬایﯽ اﻧﺴﺎن را ﺗﺎﻣﯿﻦ ﻣﯽ ﮐﻨﺪ‬ ‫ﺟﺰو ﻣﻮاد ﻏﺬایﯽ ﻫﺴﺘﻨﺪ ﮐﻪ ﻧﻘﺶ ﻣﻬﻤﯽ از ﻧﻈﺮ اﻧﺘﻘﺎل ﺑﯿﻤﺎری ﻫﺎ ﺑﻪ اﻧﺴﺎن دارﻧﺪ. ﺑﻪ ﻫﻤﯿﻦ ﻣﻨﻈﻮر, در ایﻦ ﻣﻄﺎﻟﻌﻪ ﻣﯿﺰان‬ ‫آﻟﻮدﮔﯽ ﭘﻨﯿﺮﻫﺎ ﻣﺤﻠﯽ ﻟﯿﻘﻮان ﺑﻪ ﮐﻠﯿﻔﺮم و &lt;i&gt;اﺷﺮﺷﯿﺎﮐﻠﯽ&lt;/i&gt; ﻣﻮرد ﺑﺮرﺳﯽ ﻗﺮار ﮔﺮﻓﺖ.‬ ‫&lt;br&gt;
&lt;b&gt;روش ﺑﺮرﺳﯽ:&lt;/b&gt; ﺗﻌﺪاد100 ﻧﻤﻮﻧﻪ در ﻃﻮل ﺷﺶ ﻣﺎه از ﺳﻄﺢ ﺷﻬﺮﺳﺘﺎن ﻣﺮاﻏﻪ ﻧﻤﻮﻧﻪ ﺑﺮداری و در ﺷﺮایﻂ اﺳﺘﺮیﻞ ﺑﻪ‬ ‫آزﻣﺎیﺸﮕﺎه ﻣﻮاد ﺧﻮراﮐﯽ ,آرایﺸﯽ و ﺑﻬﺪاﺷﺘﯽ ﻣﻨﺘﻘﻞ ﺷﺪ. ﻧﻤﻮﻧﻪ ﻫﺎ از ﻧﻈﺮ ﮐﻠﯿﻔﺮم و &lt;i&gt;اﺷﺮﺷﯿﺎﮐﻠﯽ&lt;/i&gt; ﻃﺒﻖ اﺳﺘﺎﻧﺪاردﻫﺎی‬ ‫ﻣﻠﯽ ایﺮان ﺑﺮرﺳﯽ ﺷﺪﻧﺪ.‬ ‫&lt;br&gt;
&lt;b&gt;یﺎﻓﺘﻪ ﻫﺎ:&lt;/b&gt; از ﻣﺠﻤﻮﻋﻪ 100 ﻧﻤﻮﻧﻪ ﭘﻨﯿﺮ ﻟﯿﻘﻮان , 98% ﻧﻤﻮﻧﻪ ﻫﺎ ﺑﻪ ﮐﻠﯽ ﻓﺮم , 50% ﻣﻮاردآﻟﻮده ﺑﻪ &lt;i&gt;اﺷﺮیﺸﯿﺎﮐﻠﯽ&lt;/i&gt; ﺗﺸﺨﯿﺺ‬ ‫داده ﺷﺪ و ﺷﺪت آﻟﻮدﮔﯽ در44% ﻧﻤﻮﻧﻪ ﻫﺎ ﺑﻪ ﺣﺪی ﺑﺎﻻ ﺑﻮد ﮐﻪ ﺗﻌﺪاد ﭘﺮﮔﻨﻪ ﻫﺎی ﻣﻮﺟﻮد در ﭘﻠﯿﺖ ﻫﺎ ی ﻣﺮﺑﻮﻃﻪ ﻏﯿﺮ‬ ‫ﻗﺎﺑﻞ ﺷﻤﺎرش ﺑﻮد. ﻫﻤﭽﻨﯿﻦ66&amp;nbsp; % ﻧﻤﻮﻧﻪ ﻫﺎ دارای ‪ PH‬ﺑﺎﻻﺗﺮ از ﺣﺪ اﺳﺘﺎﻧﺪارد ایﺮان ﺑﻮدﻧﺪ.‬&lt;br&gt;
‫&lt;b&gt;ﻧﺘﯿﺠﻪ ﮔﯿﺮی: &lt;/b&gt;ﻣﯿﺰان آﻟﻮدﮔﯽ ﭘﻨﯿﺮﻫﺎی ﺑﺮرﺳﯽ ﺷﺪه ﺑﻪ ﮐﻠﯿﻔﺮم و&lt;i&gt; اﺷﺮﺷﯿﺎﮐﻠﯽ&lt;/i&gt; زیﺎد و در اﻏﻠﺐ ﻣﻮارد از ﺑﺮرﺳﯽ ﻫﺎی‬ ‫ﻣﺸﺎﺑﻪ ﺑﯿﺸﺘﺮ اﺳﺖ.‬&lt;/div&gt;</abstract_fa>
	<abstract>&lt;b&gt;Background and objective:&lt;/b&gt; milk and its products, especially the cheese, provide the large part o f the food&amp;#39;s needs for human. This product provides good condition for transferring of disease to human. This study was conducted to determine the frequency of &lt;i&gt;E.coli &lt;/i&gt;and/or coliform contamination of Tabriz lighvan inMaraghe.&lt;br&gt;
&lt;b&gt;Materials and METHODS:&lt;/b&gt; in this descriptive cross sectional study, during six months, 100 samples of Tabriz lighvan cheese were in vestigated in Maraghe food and cosmetics laboratory.the samples were in vestigated for contamination with &lt;i&gt;E.coli &lt;/i&gt;and Coliform according to Iranian standard guideline. The isolated bacteria were further identified by conventional bacteriologic tests.&lt;br&gt;
&lt;b&gt;Results:&lt;/b&gt; of the 100 samples, 98% were contaminated with coliform , 50% contaminated with &lt;i&gt; E.coli &lt;/i&gt; , in 44% the intensity of pollution was very high, so the numbers of Pergenes in its Pelits were innumerable,also.66% of the samples have the PH higher than limit standard in Iran.&lt;br&gt;
&lt;b&gt;Conclusion:&lt;/b&gt; Result of this study showed that frequency of traditional cheese lighvan which were contaminated with &lt;i&gt;E.coli&lt;/i&gt; and coliform was significantly higher than other surveys. Key wor</abstract>
