زمینه و اهداف : غلات به واسطۀ داشتن میزان زیادی کربوهیدرات و رطوبت کافی محیط مناسبی برای رشد قارچ‌های توکسین‌زا هستند. با توجه به سرطان‌زایی و جهش‌زا بودن مایکوتوکسین‌ها، جلوگیری از ورود آنها به زنجیرۀ غذایی امری ضروری است. بنابراین مطالعۀ حاضر به‌منظور تعیین میزان و نوع آلودگی غلات وارداتی و برنج تولیدی استان خوزستان انجام شد.
مواد و روش کار:۵۰ نمونه برنج تولید خوزستان در آبان ماه ۹۴ به‌صورت دردسترس از شالیکاران جمع‌آوری شد. شناسایی آسپرژیلوس‌ها براساس معیارهای تشخیصی و نیز روش PCR، انجام شد. در ادامه میزان و نوع آفلاتوکسین نمونه‌های برنج و مایکوتوکسین‌های نمونه‌های غلات وارداتی (زمستان ۹۴ تا پاییز ۹۵) به روشHPLC مورد بررسی قرارگرفت.
یافته‌ها: براساس آزمون one sample t-test و مقایسۀ میانگین مایکوتوکسین‌های آلوده‌کننده غلات در فصل‌های مختلف با حد استاندارد ملی، میزان مایکوتوکسین‌ها در جو و گندم درحد استاندارد بود، اما ۴/۸% نمونه ذرت، آلودگی بیش از حدمجاز (ppb۵) بهAFB۱ نشان دادند. بررسی آفلاتوکسین‌ها در برنج نیز حاکی از آلودگی در حد مجاز ۱۶ نمونه به آفلاتوکسین بود. آسپرژیلوس فلاووس با حضور ۱/۴۲ درصدی، آلاینده اصلی و گونۀ غالب (%۱/۴۲) جدا شده از برنج بود.
نتیجهگیری: آسپرژیلوس فلاووس مهم‌ترین عامل تولید کننده آفلاتوکسین در برنج‌های داخلی است. بررسی غلات وارداتی نیز آمار بالایی از رشد قارچ‌ها و تولید متابولیت­های ثانویه را نشان داد که احتمالا به‌خاطر مناسب نبودن شرایط نگهداری، دما و رطوبت بالا باشد. از این رو پیشنهاد می‌گردد ابزارهای نظارتی درکنترل مراحل فرآوری و ذخیره‌سازی برنج و غلات تقویت شود.
